Recipe of the month > Prawn Cocktail
1 lb. of prawn tails (41/50 per pound count) peeled and cleaned. 1 large tomato, 2 jalapeño peppers, 2 red peppers all roasted, peeled and seeded. ½ medium roasted onion. ¾ cup fresh lime juice. ½ cup fresh orange juice. ¼ cup tomato juice. 1 tbs. sugar. Salt and tabasco to taste.

Put cleaned prawn into pot of boiling water for exactly 2 minutes. All other ingredients place together in blender and liquify. Put liquified mix and prawn together and chill.Garnish: 1 small whole red onion thinly sliced. 2 tbls. chopped chives. Several whole leaves cilantro. 1 large chopped tomato. Combine all garnish together and mix with prawn before serving slightly warm.
